Honesuki - 170 mm - Purpleheart handle

Blade length 170mm, height 50mm, stock thickness 3 mm. XC75 carbon steel, hand-ground, 0.4 mm behind the edge, bevel angle 18° per side. Triangular profile with a slightly curved edge. A hybrid between the traditional straight honesuki and a more rounded boning knife, giving a bit of rocking motion alongside the precision work around joints and bone.

Wa-style handle in purpleheart and African blackwood with copper spacer. Heat treated and finished by hand, start to finish. One-off piece.

Carbon steel will develop a patina with use and needs drying after washing to prevent rust. Hand wash only.
