Utility/Petty Knife 140 mm
This is the one I reach for when the chef's knife is overkill: trimming a bit of meat, taking the skin off an orange, doing a shallot or a few cloves of garlic without dragging out the big board. The K-tip gets into the small stuff nicely.
It's only 110 g, so surprisingly light when you pick it up. It moves where you want it to, and your hand won't be complaining after using it. The handle is a bit chunkier than you'd usually get on a small knife, on purpose. Most pettys feel like holding a pencil; this one feels like a proper knife, just a smaller one.
I ground it from XC75 carbon steel and hand finished it myself in Dublin. The handle's olive with a purpleheart ferrule and a slightly thicker copper spacer

It's carbon steel, so wash it by hand and dry it off straight away. It'll pick up a patina as you use it, and that's normal. Keep it away from the dishwasher.
