Gyuto - 180 mm - Tigerwood/Epoxy
A traditional gyuto profile, with a gently curved belly for rock chopping and a pointed tip for finer work. It's the all-purpose chef's knife shape, good for most of what you'll do in a kitchen.
Ground from XC75 high-carbon steel, 3 mm at the spine, with a partial-height bevel that keeps it thin behind the edge for clean cutting while leaving the upper blade full for stiffness and food release. Heat treated in a propane forge and finished by hand with a satin belt finish from heel to tip.
The octagonal wa handle is tigerwood with a wooden themed layered epoxy band resin band poured one layer at a time as feature. Tigerwood has a warm, striking grain, and the band makes this one easy to tell apart from the rest.
