High-Tip Gyuto - 180 mm - Snakewood/Purpleheart

225,00 €

A gyuto with a raised tip: the point sits higher towards the spine line, so there's more of a flat run along the edge and a fine tip for detail work. It's a good all-rounder for slicing, push cuts and precise work with onions, herbs and trimming.

Ground from XC75 high-carbon steel, 3 mm at the spine, and differentially hardened in the forge. The blade was heated edge-first towards the fire so only the edge reached full hardening temperature, leaving a hard, keen edge backed by a softer, tougher spine that’s more forgiving of knocks and flex.

The blade was then etched in ferric chloride to bring out the hamon, the line where the hardened edge steel meets the softer spine. It comes from the heat treatment itself, not a pattern applied afterwards, so no two are the same. It was the hand sanded for a very, very long time.

The octagonal wa handle is snakewood with a purpleheart ferrule and a thin red spacer. Snakewood is dense and heavily grained.

Blade length: 180 mm
Handle length: 130 mm
Height at heel: 40 mm
Spine: 3 mm
Weight: 153 g

This is carbon steel, so hand wash it and dry it straight away. The etched finish will soften with use and a patina will develop over it. That’s normal, and a light polish brings the hamon back.. Not dishwasher safe.
